Chocolate Chip Biscotti

Chocolate Chip Biscotti Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • Optional: 1/2 cup chopped nuts (walnuts or almonds work well)

Instructions:

  1. Preheat Oven and Prepare Baking Sheet:

    • Preheat your oven to 350°F (175°C).
    • Line a baking sheet with parchment paper or lightly grease it.
  2. Mix Dry Ingredients:

    • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream Butter and Sugar:

    • In a large bowl, beat the sugar and softened butter with an electric mixer until light and fluffy.
    • Add eggs one at a time, beating well after each addition.
    • Stir in the vanilla extract.
  4. Combine Ingredients:

    • Gradually add the dry ingredients to the butter mixture, stirring until just incorporated.
    • Fold in the chocolate chips and nuts (if using).
  5. Shape the Dough:

    • Divide the dough in half.
    • On the prepared baking sheet, shape each half into a log approximately 12 inches long and 2 inches wide.
  6. First Bake:

    • Bake for 25-30 minutes, or until the logs are light golden brown.
    • Remove from the oven and let cool on the baking sheet for about 10 minutes.
  7. Slice and Second Bake:

    • Transfer the logs to a cutting board. Using a serrated knife, cut the logs diagonally into 1/2-inch thick slices.
    • Place the slices cut side down back on the baking sheet.
    • Bake for an additional 10 minutes, then turn the biscotti over and bake for another 10 minutes until they are crisp and golden.
  8. Cool and Serve:

    • Remove from the oven and allow to cool on a wire rack.
    • Serve with your favorite blend of Alfonso’s Coffee.

Optional Serving Tip:

  • For an extra touch of sweetness, melt additional chocolate and drizzle over the cooled biscotti before serving.
