Cinnamon Streusel Coffee Cake

Ingredients:

  • For the Cake:

    • 1/2 cup unsalted butter, softened
    • 1 cup sugar
    • 2 large eggs
    • 2 cups all-purpose flour
    • 1 tsp baking powder
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 1 cup sour cream
    • 1 tsp vanilla extract
  • For the Streusel:

    • 1/2 cup brown sugar
    • 1/4 cup all-purpose flour
    • 1/2 tsp ground cinnamon
    • 3 tbsp unsalted butter, cold and cut into small pieces

Instructions:

  1. Prepare the Cake:

    • Preheat your oven to 350°F. Grease and flour a 9-inch round cake pan.
    • In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
    • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the sour cream. Stir in the vanilla extract.
  2. Make the Streusel:

    • In a small bowl, combine brown sugar, flour, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Assemble and Bake:

    • Pour half of the cake batter into the prepared pan. Sprinkle half of the streusel over the batter. Top with the remaining batter, then sprinkle the remaining streusel on top.
    • Bake for 40-50 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool before serving.
